Green Pea Shoots, Snap Peas, Radishes & Butter Lettuce
From Point Reyes Station restaurant, 2004.
- Butter lettuce
- Snap Peas
- Radishes, sliced how you like them
- Green pea shoots (see an Oriental grocer)
Dressing:
- pearl onions
- butter
- Sauvignon Blanc
- heavy cream
Arrange the vegetables attratively.
Saute onions in butter, and add Sauvignon Blanc and cream. Reduce until
dressing is a medium-thick consistency. Drizzle over greens.
