Hummus
This recipe is from Charlotte Mueller; recorded October 29, 1998.
- 2 1/2 cups garbanzo beans, rinsed
- 1 1/2 T. lemon juice
- 2 cloves garlic
- 1 t. cumin
- 1 1/2 T. parsley
1. In a blender or food processor, blend all ingredients until mixture
reaches desired consistency. For a creamier texture, add 1/4 to 1/2 cup water.
2. Chill and serve cold with whole-wheat pita bread.
Makes 2 cups.
