Salzburger Nockerl, second version

Beat egg whites until very stiff. Lightly stir in flour, egg yolks, lemon rind. With spatula, lift in 3 mounds onto heavy, well-buttered baking dish.

Bake in preheated moderate oven (350) eight minutes or until outside is golden brown but inside is still creamy. Dust with powdered sugar. Serve immediately!

Serves 6.
