Zucchini Quiche from Barbara Zeller
Recorded August 16, 2000. From a Garden Tour visit to Bittersweet Cottage in Coventryville, New York.
- 3 cups grated zucchini (2 medium zucchini should be plenty)
- 1 box Jiffy corn muffin mix
- 3 eggs beaten with fork
- 1 cup Parmesean cheese
- 1 cup half-and-half
- 1/2 cup oil (Note: I forgot to put in oil, and it was fine - so use less if you like)
- 1/2 smalll onion, grated
- dash white pepper
Mix all together, pour into greased baking dish.
Bake at 350 for 45-50 minutes.
Spinach, collard greens or chard may be used in place of zucchini.
Serve hot, warm or cool. Delicious!
