Snow Balls
Holiday 2005. From Bill Egan's mother's file.
Makes 3 1/2 doz. Chill 1 hour. Bake at 325 for 18 minutes.

1/2 cup (1 stick) butter, softened

1/2 cup confectioners' sugar

1 T vanilla

1 1/2 cups all-purpose flour

1/2 cup finely ground macadamia nuts (use blender)

1/3 cup confectioners' sugar for coating

Beat together butter and 1/2 cup confectioners' sugar. Add vanilla.
On low speed, beat in flour and nuts. Wrap in plastic and refrigerate
1 hour.

Heat oven to 325. Pinch off heaping tablespoonfuls of dough. Roll
into balls. Place 1 to 2 inches apart on ungreased baking sheets.

Bake at 325 for 18 minutes.
- Sift remaining 1/3 cup confectioners' sugar over still warm cookies to
coat. Resift once cooled, if desired.
